Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Hand wash sink and triple sink soiled with pink colored build up.
12A-16-4    High Priority - Employee began working with food, handling clean equipment or utensils, or touching unwrapped single-service items without first washing hands. Female employee preparing frozen drinks with no water at sinks to wash hands. Female employee entered food truck from outside and put on gloves and began making drinks without washing hands.
27-12-4    High Priority - Establishment operating with no potable running water. Establishment in operation at 2566 Saw Hwy 484 with no running water.
35A-02-6    High Priority - Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area. Three live flies in kitchen area.
53A-01-7    Intermediate - Manager or person in charge lacking proof of food manager certification. Unable to provide certified food manager card.
53B-01-5    Intermediate - No proof of required state approved employee training provided for any employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Unable to provide any employee training documents.
