Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

08A-05-6    High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. Raw shell eggs over pico in reach in cooler on cooks line. Raw beef over raw shrimp in reach in cooler across from fryers. Manager moved beef to walk in cooler and eggs to the bottom of cooler. **Corrected On-Site**
03F-02-5    High Priority - Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking and the time removed from temperature control cannot be determined. Time mark on paper was for 3/14, on time as a public health control application time parameters are 11-3, per manager wings were brought out at 12 and will discard at 4pm. 03B-01-6    High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. stew (98F - Hot Holding) item in small container in garlic bread holder in steam table, employee stated it was leftover, he voluntarily discarded.
01C-03-4    Intermediate - Clam/mussel/oyster tags not marked with last date served. **Repeat Violation**
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Interior top of ice machine by oven and deflector plate in ice machine by beer walk in cooler. **Repeat Violation**
02C-04-5    Intermediate - Operator is not properly tracking/marking the number of days ready-to-eat, time/temperature control for safety food prepared onsite was held at refrigeration temperatures prior to freezing in order to properly date mark the food when it is thawed and held at refrigeration temperatures again. Stew in reach in cooler on cooks line dated 3/12, operator stated it was cooked 3/12 then placed in freezer and was pull thawed 3 days ago, employee dated correctly. **Corrected On-Site**
