Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

22-45-4    High Priority - Food-contact surfaces not sanitized after cleaning, before use. Do not use equipment/utensils not properly sanitized. Observed employee washed and rinsed pot without sanitizing. Coached employee and employee began to set up triple sink with chlorine sanitizer. **Warning**
14-86-1    High Priority - Non-food grade paper/paper towel used as liner for food container. Observed non food grade paper towel used as liner in bowl with cilantro. **Warning**
14-31-5    High Priority - Nonfood-grade bags used in direct contact with food. Observed plantains stored inside of thank you bag at reach in cooler in kitchen area, manager voluntarily discarded products. **Repeat Violation** **Warning**
12A-13-4    High Priority - Observed employee handle soiled equipment and then handled clean equipment without washing hands. Observed employee handling soiled cooking pot and then began handling clean containers, no hand wash. **Warning**
08A-05-6    High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw beef stored over cooked rice inside of reach in freezer at storage area, manager relocated products. **Corrected On-Site** **Warning**
08A-20-5    High Priority - Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. Observed raw chicken stored over raw beef inside of reach in cooler in kitchen area **Warning**
03B-01-6    High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed pork belly (115F - Hot Holding) as per manager for less than 30 mins. Discussed using time as public health control with manager. Observed rice (130F - Hot Holding) as per manager for one hour, advised manager to stir product to distribute heat. **Repeat Violation** **Warning**
31A-04-4    Intermediate - Handwash sink removed from food preparation/dishwashing area. Must be reinstalled in the same location where removed. Observed faucet removed from hand sink in ware wash area. **Warning**
51-16-7    Intermediate - No plan review submitted and approved - renovations were made or are in progress. Must submit plans and plan review application to DBPR H and R Plan Review office located at 2601 Blair Stone Rd., Tallahassee, FL 32399-1011. Plans must be submitted AND approved within 60 days.
