Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

06-09-1    Basic - Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. In the walk in cooler, 1 case of thawed vacuum packaged sea bass still sealed in the bag. Operator removed the sea bass to discard. **Corrective Action Taken**
22-41-4    High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. During inspection chlorine dish machine at 0ppm. Operator will utilize three compartment sink for sanitation. **Warning**
08A-05-6    High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. In the flip top reach in cooler at the end of the cook line, raw steak over cooked etouffee. Operator relocated the steaks. **Corrected On-Site** **Repeat Violation** **Admin Complaint**
01B-24-5    High Priority - Ready-to-eat, time/temperature control for safety food not consumed/sold within 7 days after opening/preparation. See stop sale. In the walk in cooler, container of cooked noodles dated 1/11. Operator discarded the noodles. **Repeat Violation** **Admin Complaint**
01B-13-4    High Priority - Stop Sale issued due to food not being in a wholesome, sound condition. In the walk in cooler, 1 case of thawed vacuum packaged sea bass still sealed in the bag. Operator removed the sea bass to discard.
41-10-4    High Priority - Toxic substance/chemical improperly stored. Chemical spray bottle behind the bar counter stored with liquor bottles. Operator relocated the chemical bottle. **Corrected On-Site** **Repeat Violation** **Admin Complaint**
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Portable cutting boards with black residue staining build up. Can opener on the prep table with food debris build up. **Repeat Violation**
02B-01-5    Intermediate - Menu does not identify which items contain raw or undercooked animal foods covered by the consumer advisory. Poached eggs not identified as raw on brunch menu. **Warning**
52-02-4    Intermediate - Misrepresentation of a fruit or fruit juice. Fresh juice offered on cocktail menu but per operator bottle juice is utilized. **Admin Complaint**
03F-10-5    Intermediate - No written procedures available for use of time as a public health control to hold time/temperature control for safety food. Buttermilk wash for breading station held on time as public health control with no written procedures. Inspector provided procedures. **Corrective Action Taken**
02A-01-4    Intermediate - Raw or undercooked oysters offered and establishment has no consumer advisory sign provided on wall, menu, placard, table tent or by any other written means. Raw animal foods must be fully cooked prior to service. No consumer advisory for raw oysters offered in establishment. Inspector provided sign that operator posted and printable sign. **Corrected On-Site**
