Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Accumulation of black/green mold-like substance in the interior of the ice machine/bin.
Observed mold like substance on interior of ice machine located in storage area. **Repeat Violation**
Basic - Dishmachine not washing/rinsing properly. Must wash, rinse and sanitize all dishware, equipment and utensils in three-compartment sink until dishmachine is functioning properly.
Dishwasher is not pulling sanitizer from reservoir properly. 0 ppm on test strips. Operator indicated will make maintenance call on dishwasher and use triple sink in the interim. Operator emailed confirmation of schedule maintenance Tuesday, February 27, 2024, through "Whaley Food Service." **Corrective Action Taken**
Basic - Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items.
Observed eye glasses next to serving plates on shelf above flip top cooler across from cookline. **Repeat Violation**
Basic - Equipment in poor repair.
Gaskets on reach in cooler beneath flip top located across from cookline is torn.
Prep table left of reach in freezer rusted on bottom shelf. **Repeat Violation**
Basic - In-use utensil stored in standing water less than 135 degrees Fahrenheit.
Observed meal prep utensils in standing water of 118F. Operator removed utensils and placed in triple sink for cleaning. **Corrected On-Site**
Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust.
Gaskets on reach in cooler beneath flip top across from cookline is soiled.
Observed grease suspended from vent hood over cook station. **Repeat Violation**
Basic - Outer openings not protected during operation and vermin and/or environmental cross contamination present.
Observed rear exit door near triple sink open before and after delivery of food items.
Basic - Wet wiping cloth not stored in sanitizing solution between uses.
Observed wet wiping cloth stored on prep table across from cook station. Employee removed wet cloth. **Corrected On-Site**
High Priority - Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area.
Observed 8-10 flying insects above triple sink and hand wash sink located near rear exit of establishment. **Repeat Violation** **Admin Complaint**
Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime.
Observed can opener attached to prep table right of hand wash sink soiled with debris.
Intermediate - No paper towels or mechanical hand drying device provided at handwash sink.
Observed no paper towels in employee bathroom third door from right next to customer bathrooms. **Repeat Violation**
Intermediate - No written procedures available for use of time as a public health control to hold time/temperature control for safety food.
Operator had no written procedures for TPHC. Operator completed and signed TPHC paperwork during inspection. **Corrected On-Site** **Repeat Violation**
