A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Bowl or other container with no handle used to dispense food. Observed metal bowl in the fried rice used as a scoop, operator removed. **Corrected On-Site** **Repeat Violation**
Basic - Food stored on floor. Observed broccoli stored on the floor in the walk in cooler. Operator stored properly. **Corrected On-Site** **Repeat Violation**
Basic - In-use wet wiping cloth/towel used under cutting board. Observed wet cloth under a cutting board in the kitchen, operator removed. **Corrected On-Site** **Repeat Violation**
Basic - Worn, torn and/or soiled floors/carpeting. Observed floor under cook line with grease. Observed walk in cooler and walk in freezer floor soiled. **Repeat Violation**
High Priority - Non-food grade paper/paper towel used as liner for food container. Observed towel used as a liner on top of the fried rice in the walk in cooler, operator removed. **Corrected On-Site**
High Priority - Rodent activity present as evidenced by rodent droppings found. Observed 4 rodent dropping on the floor of the dry storage room, and 3 rodent dropping under the dishwasher machine.
Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. Observed no paper towel in the kitchen handwashing sink. Operator placed new roll. **Corrected On-Site** **Repeat Violation**
