Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

12B-01-4    Basic - Cook eating while preparing food, scooping beans out of a pot on the stove. Reviewed proper procedures with cook and she stopped eating and put the food away. **Corrected On-Site**
10-08-5    Basic - Ice scoop handle in contact with ice at front counter. Cook removed. **Corrected On-Site**
10-01-5    Basic - In-use scoop in non-time/temperature control for safety flour not stored with handle above top of food within a closed container. Operator removed scoop. **Corrected On-Site**
12A-05-4    High Priority - Cook ate tacos on cook line , touching her lips with her fingers, then engaged in food preparation, scooped beans out of a pot on the stove, without washing hands. Cook went to wash her hands. **Corrected On-Site**
12A-09-4    High Priority - Single-use gloves not changed as needed after changing tasks or when damaged or soiled. Cook placed raw beef on grill and then prepared and plated tortillas without changing gloves. Reviewed changing gloves when going from raw to ready to eat food. Cook washed her hands and changed gloves. **Corrected On-Site**
29-42-4    High Priority - Vacuum breaker missing at mop sink faucet to mop sink faucet.
27-11-4    Intermediate - No running water at mop sink hot or cold. After replacing water heater, hot and cold water lines to mop sink were not reconnected.
