A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package.
Observed packages of fish in reduced oxygen packaging not cut open to thaw. Operator instructed employee to cut packages open.
Basic - Cutting board has cut marks and is no longer cleanable.
Observed at cutting board at sandwich station and across from side cook line. **Repeat Violation**
Basic - In-use knife/knives stored in cracks between pieces of equipment.
Observed at hand wash sink next to cook line a knife store between sink and wall. Operator removed. **Corrected On-Site**
Basic - Interior of refrigerator or freezer in disrepair/has exposed insulation.
Observed at reach in freezer located in storage area next to office. **Repeat Violation**
Basic - Time/temperature control for safety food thawed in an improper manner.
Observed a container of fish thawing in standing water. Operator placed container under running water to properly thaw. **Corrected On-Site**
Intermediate - Handwash sink used for purposes other than handwashing.
Observed at hand sink next to cook line used as dump sink for ice. **Repeat Violation**
Intermediate - No paper towels or mechanical hand drying device provided at handwash sink.
Observed at hand sink located at beverage prep area. **Repeat Violation**
