Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Cleaned and sanitized plates not properly stored. Stored on dirty shelving in the open air bar and exposed to environmental contamination. **Warning**
Basic - Cold holding equipment not maintained in good repair. Do not store time/temperature control for safety food in this unit until the unit is repaired.
The stand up refrigeration unit in wait station cold holding @65 F. Holding TCS items butter cups, cream cheese cups and raw bacon **Warning**
Basic - Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. ROP raw tuna thawed in unopened package . Stored in stand up refrigerator on cookline **Repeat Violation** **Warning**
Basic - Equipment in poor repair.
Observed one of the required air curtains at the opening to the outside and inside bar is not operational. **Warning**
Basic - Equipment located in an area not protected from overhead leakage of pipes, drains and other sources.
Observed the AC unit leaking condensation onto paper towel dispenser and hand wash sink by dish area in the kitchen. **Warning**
Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Beer bottle cooler gaskets are soiled at outside bar .
Pink wood Shelving-is soiled at outside bar.
Chest freezer holding sausage and pizza gaskets are soiled with black mold like substance. **Warning**
Basic - Outside bar Walls soiled with accumulated grease, food debris and black mold like substance on under bar wood and floors and bar top **Warning**
Basic - Soda syrup boxes stored outside in open air bar .not enclosed and exposed to environmental contamination.
Condiment bottles , ketchup and muster in plastic containers stored overnight at outside bar , not protected from environmental contamination. **Warning**
High Priority - Stop Sale issued on time/temperature control for safety food due to temperature abuse. In stand up refrigeration unit at wait station raw bacon
