Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

14-01-5    Basic - Bowl or other container with no handle used to dispense food. There is a bowl inside a container of beans and a pot with no handle in a container of rice. **Repeat Violation**
14-11-5    Basic - Equipment in poor repair. The door gaskets on the three door reach in cooler are damaged.
08B-38-4    Basic - Food stored on floor. There are cases of chicken stored on the floor in the walk-in refrigerator trailer. Operated moved the chicken to proper storage. **Repeat Violation**
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. There is a heavy buildup of drease on the hood around the filters.
29-49-6    Basic - Standing water in bottom of reach-in-cooler. There is standing water in the under counter cooler by the dishwasher.
06-01-5    Basic - Time/temperature control for safety food thawed in an improper manner.there are two boxes of beef liver thawing on a table at room temperature.
14-17-4    Basic - Walk-in cooler/freezer shelves with rust that has pitted the surface. The shelves in the produce walk-in cooler are rusted and pitted.
12A-16-4    High Priority - Employee began working with food, handling clean equipment or utensils, or touching unwrapped single-service items without first washing hands. An employee went outside, re-entered the kitchen and handled a clean knife and unwashed head of lettuce without washing hands. Educated the operator and employee on proper hand washing. Employee washed his hands. **Corrected On-Site**
08A-05-6    High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. In the three door reach in cooler raw sausage is stored over flour tortillas and lettuce. Operator moved the sausage to proper storage order. **Corrected On-Site** **Repeat Violation** **Admin Complaint**
12A-09-4    High Priority - Single-use gloves not changed as needed after changing tasks or when damaged or soiled.employee exited and re-entered the building an handled clean utensils while wearing the gloves that he had on prior to leaving the building.
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. On a table in the prep area there is cut lettuce (48F - Cold Holding). Operated moved the cut lettuce to a cooler. Corrective action taken.
01C-03-4    Intermediate - Clam/mussel/oyster tags not marked with last date served. Oyster tags are not marked with the last date served. **Repeat Violation**
