Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance.
Build up of dust on ceiling tile/vent closest the hood system on the cook line. **Repeat Violation**
Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust.
Sides of the table top griddle have build up of food residue.
Handles of the reach in freezer opposite the fryers have food residue.

Basic - Old food stuck to clean dishware/utensils.
Clean containers stack on shelf opposite the three compartment sink have old food debris in the lip of the container.
Basic - Single-service articles improperly stored.
Box of single service food sleeves spin the floor by the prep line and fryers. Operator relocated the container of single service food sleeves. **Corrected On-Site**
Basic - Wet mop not stored in a manner to allow the mop to dry.
Wet mop stored in mop water at the mop sink. Operator relocated the wet mop. **Corrected On-Site** **Repeat Violation**
High Priority - Employee cracked raw shell eggs and then handled ready-to-eat food and/or clean equipment or utensils without washing hands.
Observed employee on the cook line crack raw shell eggs with gloves then handle single service carry out container. Operator intervened and had employee change gloves/wash hands. **Corrective Action Taken**
High Priority - Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area.
Observed 2 flies at the front service counter area by the soda dispenser.
Observed 2 flies by the prep station opposite the office area.
Observed 1 fly in the back dry storage room on shelves by the bread racks. **Warning**
High Priority - Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking. Reconstituted dehydrated onions on the main cook line held on time as public health control missing product time marking. Operator added time marker. **Corrected On-Site**
