Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

29-49-6    Basic - Standing water in bottom of reach-in-cooler. Reach-in cooler at the cook line.
14-17-4    Basic - Walk-in cooler/freezer shelves with rust that has pitted the surface. Walk-in cooler shelves.
22-41-4    High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. At the bar area, chlorine 0 ppm, manager replaced container, 50-100ppm. **Corrected On-Site** **Repeat Violation** **Admin Complaint**
12A-07-5    High Priority - Employee failed to wash hands before putting on gloves to initiate a task working with food. Male employee working with raw fish, removed gloves and place new gloves to handle cleaned plates, no hand wash occurred, Manager addressed situation. **Corrective Action Taken**
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Reach-in cooler at the server station, cilantro sauce (sour cream base) 50F, Manager moved to freezer. Also at the cook line, raw beef 44F, moved to freezer **Corrective Action Taken**
02C-03-5    Intermediate - Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening. Walk-in cooler (outside), milk no date marked, manager dated 12/10/24. **Corrected On-Site**
31A-09-4    Intermediate - Handwash sink not accessible for employee use at all times. Handwash sink at the cook line, big containers and utensils inside sink, manager moved all. **Corrected On-Site**
