Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-24-5    Basic - Hole in or other damage to wall. Area of wall below and to left of triple sink damaged. **Repeat Violation**
10-07-4    Basic - In-use utensil stored in standing water less than 135 degrees Fahrenheit. Lime squeezer in container of standing water in service window. Manager dumped water. **Corrected On-Site**
14-20-4    Basic - Ripped/worn tin foil used as shelf cover. Shelf in kitchen by service window covered in torn/soiled foil.
36-27-5    Basic - Wall soiled with accumulated grease, food debris, and/or dust. Wall area around triple sink soiled with mold like buildup.
12A-07-5    High Priority - Employee failed to wash hands before putting on gloves to initiate a task working with food. Employee put on gloves to cut onions without first washing hands. Reviewed with manager proper hand wash procedures to discuss with staff. **Corrective Action Taken**
08A-04-5    High Priority - Raw animal food stored over or with unwashed produce. In walk in cooler, flats of raw shell eggs above boxes of artichoke hearts. Manager inverted for proper separation. **Corrected On-Site** **Repeat Violation** **Admin Complaint**
08A-05-6    High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. 1) In kitchen fliptop unit lower cooler, container of raw prepped chicken above open container of cooked rice and container of raw shell eggs above containers of portioned sauces. Manager rearranged all items for proper separation. 2) In back of walk in cooler, containers of raw fish above containers of portioned cooked seafood mix. Manager inverted items for proper separation. **Corrected On-Site**
08A-20-5    High Priority - Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. 05-05-4    Intermediate - Ambient air thermometer in holding unit not accurate within plus or minus 3 degrees Fahrenheit. Walk in cooler exterior thermometer reading 48F - unchanged during inspection. All food items inside at proper temperature. Manager placed new thermometer inside unit; temperature dropped to 39F. **Corrected On-Site**

02C-02-5    Intermediate - Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. 1) Containers of frozen sauces in reach in freezers missing date mark for when prepared. 2) Bottled house made chica morada in kitchen glassfront cooler missing date mark. 3) Containers of prepared sauces in walk in cooler missing date produced.
