Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Accumulation of black/green mold-like substance in the interior of the ice machine/bin.
Observed 2 ice machines soiled in the interior of both with mold like substance.
Basic - No handwashing sign provided at a hand sink used by food employees.
Observed no hand washing sign in outside bar hand sink.
Inspector will provide copy of hand washing sign. **Corrected On-Site** **Repeat Violation**
High Priority - Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area.
Observed total of 4 flying insects.
3 flying insects in kitchen near mop sink area.
1 flying insect in in side bar area.
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.
Observed in seafood and meat cooler Crab (49F - Cold Holding); Steak (51F - Cold Holding); Beef patties (51F - Cold Holding); Sausage (51F - Cold Holding); Raw Shrimp (48F - Cold Holding).
Manager voluntarily threw discolored beef patties out.
Cooler has an Ambient temperature of 52F.
Manager stated worker has been in /out of cooler since 11am.
Manager removed all meats, crab , oysters and placed in produce cooler, and placed ice on recently prepped shrimp. **Corrective Action Taken**
High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit.
Observed on steam table Hush puppies at (120F - Hot Holding).
Manager voluntarily discarded hush puppies.

Observed high temperature dish machine without measuring device to test proper sanitation. **Repeat Violation**
