Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

22-20-5    Basic - Accumulation of black/green mold-like substance in the interior of the ice machine/bin. Ice machine in kitchen soiled. Operator advised of need to clean and sanitize inside of machine.
14-01-5    Basic - Bowl or other container with no handle used to dispense food. Bowl with no handle stored in large container of salt, used for dispensing product. Operator notified and removed. **Corrective Action Taken**
08B-38-4    Basic - Food stored on floor. Bags of flour stored on floor close to back door of kitchen. Manager notified.
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Top of dish machine soiled. Operator advised.
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Mounted can opener soiled with debris. Operator advised. **Repeat Violation**
16-37-1    Intermediate - No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. No chlorine test kit to monitor chlorine sanitizer concentration for dish machine. Operator advised to acquire kit as soon as possible.
02C-02-5    Intermediate - Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Cooked pasta and cooked ground beef in walk in cooler not date marked, more than 24 hours, less than 7 days. Operator placed labels identifying use by date on product. **Corrected On-Site**
