Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

08B-38-4    Basic - Food stored on floor. Observed case of dessert on floor inside walk in freezer.
14-69-4    Basic - Ice buildup in reach-in freezer and/or walk-in freezer. Observed ice buildup inside reach in freezer at front counter.
51-13-4    Basic - No Heimlich maneuver/choking sign posted. Provided to operator via email.
36-27-5    Basic - Wall soiled with accumulated grease, food debris, and/or dust. Observed wall with grease accumulation throughout kitchen.
03F-02-5    High Priority - Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking and the time removed from temperature control cannot be determined. See stop sale.
03B-01-6    High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed cheese pizza (78F - Cold Holding) at front counter, as per person in charge for approximately 2 hours prior. As per manager he utilized time as a public health control but no date marked on the display and no written procedures. **Repeat Violation**
11-27-4    Intermediate - Establishment has no written procedures for employees to follow in response to a vomiting or diarrheal event where the vomit or diarrhea is discharged onto surfaces in the establishment. Provided to operator via email.
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Observed can opener soiled. **Repeat Violation**
31B-02-4    Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. Manager replaced. **Corrected On-Site** **Repeat Violation**
05-08-4    Intermediate - No probe thermometer provided to measure temperature of food products.
16-37-1    Intermediate - No quaternary chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths.
03F-10-5    Intermediate - No written procedures available for use of time as a public health control to hold time/temperature control for safety food. Provided to person in charge via email.
02C-02-5    Intermediate - Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Observed cooked chicken and pasta stored inside walk in cooler no date marking, as per manager for more than 24 hours prior
53B-05-5    Intermediate - Required employee training expired for all employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Observed all employee training provided by FRLA expired on 05-14-2024. **Warning**
27-16-4    Intermediate - Water with a temperature of least 85 degrees Fahrenheit not provided/shut off at employee handwash sink. Observed hot water shut off at front counter, manager turned back on. **Corrective Action Taken** **Repeat Violation**
