Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Equipment in poor repair.
At the bar the Beverage cooler interior is rusting and soiled and not working .
The ice machine is not working.
The reaching cooler in the kitchen is not working. No food is stored in this unit,
Basic - Faucet/handle missing at plumbing fixture.
The dish spray hose nozzle is missing on spray hose.
Only a plastic hose is extending from the broken spray hose.
Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Sliding lids and handles on the working beverage cooler are soiled with mold like substance and rust.
Gaskets on chest freezer are soiled.
Basic - Single-service articles improperly stored in closet , lids and cups on the floor and in disarray. Dirty pillows and linens are stored on top of single service items
Basic - Unnecessary items/unused equipment on the premises.
Beverage cooler and ice machine are not working. Beverage cooler interior is rusting and soiled and has debris inside
High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. 0 ppm chlorine
The container of sanitizer was replaced and the chlorine is 100 ppm. **Corrected On-Site**

High Priority - Time/temperature control for safety food prepared from/mixed with ingredient(s) at ambient temperature not cooled to 41 degrees Fahrenheit within 4 hours. Cut tomatoes stored and cooling in walk-in cooler more than 4 hours at 49F.
