A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Bowl or other container with no handle used to dispense food. Observed solo cup being used to dispense salsa in 2 door reach in cooler on cooks line. Operator removed cup. **Corrected On-Site**
Basic - Ceiling/ceiling tile shows damage or is in disrepair. Observed peeling ceiling tile in kitchen above food prep table on cooks line. **Repeat Violation**
Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Observed employee drink on food prep make station at cook line in kitchen. Operator removed drink. **Corrected On-Site**
Basic - Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. Observed employee speaker on cook line on top of make station. Employee removed speaker. **Corrected On-Site**
Basic - Floor and wall junctures not coved in food preparation/storage/warewashing areas or bathroom. Observed missing cove molding in dish area along wall and entrance to kitchen.
Basic - Floor tiles missing and/or in disrepair. Observed missing floor tile in back kitchen food prep area in front of walk through to kitchen. **Repeat Violation**
Basic - In-use utensil in non-time/temperature control for safety food not stored with handle above top of food within a closed container. Observed in walk in cooler in flour bin handle of scoop touching product. Operator removed scoop. **Corrected On-Site**
Basic - Unsealed concrete floor in food preparation, food storage, warewashing area or bathroom. Observed unsealed concrete in dishwashing and bar area. **Repeat Violation**
Basic - Wiping cloth sanitizing solution stored on the floor. Observed sanitizer bucket on floor in bar area. Operator removed sanitizer bucket. **Corrected On-Site**
