Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

40-06-5    Basic - Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. Observed cellphones and keys stored on top of prep tables in the kitchen.
36-08-4    Basic - Floor and wall junctures not coved in food preparation/storage/warewashing areas or bathroom. Throughout the kitchen. **Repeat Violation**
14-38-4    Basic - Food storage container/container lid cracked or broken. Observed multiple containers cracked in the reach in cooler and walk in cooler.
36-24-5    Basic - Hole in or other damage to wall. Observed hole on the door, at the front counter.
14-33-4    Basic - Reach-in cooler shelves with rust that has pitted the surface. **Repeat Violation**
08B-12-5    Basic - Stored food not covered. In the reach in cooler.
14-17-4    Basic - Walk-in cooler/freezer shelves with rust that has pitted the surface. **Repeat Violation**
36-27-5    Basic - Wall soiled with accumulated grease, food debris, and/or dust. Observed wall soiled by the steam table, storage room and wearwashing area. **Repeat Violation**
36-10-4    Basic - Worn, torn and/or soiled floors/carpeting. Walk in cooler and walk in freezer. **Repeat Violation**
10-05-5    High Priority - In-use utensil stored in unclean water at or above 135 degrees Fahrenheit. Observed utensils in standing water on the stove top with 103F. Operator turned on fire. **Corrective Action Taken**
03B-01-6    High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed chicken in sauce (112F - Hot Holding) stored on the steam table for less than 2 hours, as per operator. Operator added more water to the steam table, and reheated item.
22-31-4    Intermediate - Observed all shelves throughout the kitchen and storage area with surface rust.
