Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Building components, attachments or fixtures in poor repair.
1. Hole in wall in kitchen near back door.
2. Hole in ceiling in kitchen near back door.
3. Cracked floor tiles in server station.
4. Window screen on back door of kitchen torn.
High Priority - Employee cracked raw shell eggs and then handled ready-to-eat food and/or clean equipment or utensils without washing hands.
Employee at cookline cracked raw shell eggs, changed gloves, then proceeded to handle clean plates and foam trays at cookline without first washing hands. Manager had employee wash hands and put on new gloves before continuing to work at cookline. **Corrective Action Taken**
High Priority - Raw animal food stored over/not properly separated from ready-to-eat food.
1. Raw shell eggs on prep table at cookline stores directly above open pan of cooked bacon. Manager moved cooked bacon to another table during this inspection.
2. Open box containing raw bacon stored on shelf at cookline directly above containers of foil, plastic, flour, and uncooked rice. Manager moved raw bacon away from area during this inspection. **Corrected On-Site**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.
On prep table in kitchen near cookline:
baked potatoes (47F - Cold Holding). Manager stated the baked potatoes have been held at room temperature on the counter for approximately 45 minutes. Manager placed the baked potatoes in the freezer to rapidly cool to 41F.

Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime.
Interior wall of ice machine soiled with brown substance. **Repeat Violation**
Intermediate - Manager or person in charge lacking proof of food manager certification and no other certified food service manager employed at this location.
One National Registry of Good Safety Professionals food manager certificate for Christy M. Ramirez expired on 03/21/2024. Manager stated there are no other certified food managers for establishment. **Warning**
