Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses. Observed wiping cloth stored on pizza station cooler. Operator stored in solution. **Corrected On-Site** **Warning**
22-49-4    High Priority - Dishmachine not sanitizing properly. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. 03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed in reach in cooler butter 39-50F. Per operator food not prepared or portioned today. Observed food past the fill line. Operator placed butter out of temp into another container to quick chill in walk in cooler. **Corrective Action Taken** **Warning**
41-27-4    High Priority - Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Observed Sanitizer Bucket (Chlorine 200+ppm). Operator corrected to 100ppm chlorine. **Corrected On-Site** **Warning**
03D-15-4    Intermediate - Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. At reach in cooler across from handwashing sink shrimp 49-50F at 1:47 to 49-50F at 2:31 (ambient cooling since 12:00). At current rate of cooling food will not reach 41F or below within 4 hours.
