Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - In-use utensil not stored with handle above the top of time/temperature control for safety food and rim of the container. Cole slaw scoop handle in product. Manager removed at time of inspection. **Corrected On-Site**
High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Kitchen dish machine tested at 0ppm. Machine primed and tested at 100ppm. Bar dish machine tested at 0ppm. **Warning**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Cook line drawers: raw burgers 46F, hush puppy mix 44F, per manager in cooler approximately 25 minutes. Manager put items on ice for better cooling. **Corrective Action Taken**
Intermediate - Handwash sink used for purposes other than handwashing. Observed rice in handwash sink by walkin cooler. Manager states rice wash washed there.
Intermediate - No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Establishment requires chlorine test strips for dish machines.
Intermediate - No currently certified food service manager on duty with four or more employees engaged in food preparation/handling. Observed 2 cooks, and 3 servers.
Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. At cook line hand wash sink. Restocked at time of inspection. **Corrected On-Site**
