A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Accumulation of black/green mold-like substance in the interior of the ice machine/bin.
Observed interior of ice machine soiled near ice chute of unit.
Basic - Employee eating in a food preparation or other restricted area.
Observed employee eating on cook line while in preparation .
Manager spoke to employee regarding eating in designated area. **Corrective Action Taken**
Basic - In-use tongs stored on equipment door handle between uses.
Observed in use tongs on oven door located on cook line.
Employee removed and stored properly. **Corrected On-Site**
High Priority - Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area.
Observed 2 flying insects at the end of cook line. **Repeat Violation** **Admin Complaint**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.
Observed in drawer cooler under grill Flank steak (48F - Cold Holding); Raw Chicken (48F - Cold Holding); Cut tomatoes (49F - Cold Holding); Raw shrimp (49F - Cold Holding).
Cooler has an ambient temperature of 39F.
Employee stated they did have drawer opened during morning preparation.
Employee will place ice on TCS items in drawer. **Corrective Action Taken** **Warning**
High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb.
Observed hose Bibb near mop sink without back flow device.
Intermediate - Handwash sink not accessible for employee use at all times.
Observed handwashing sink near ice machine blocked with tools.
